Onion & Avocado Salad
1 ripe avocado
1/4 red onion
2 cups of mixed greens
Shave the onion. Your dinner guests don't want a big chunk of onion in the salad, so shave them thin. I used this cool slicer box my grandma gave me for Christmas.
Slice the avocado with a nice sharp knife, using the slicer box will make a huge mess. Leafy greens go in the bowl first then layer the sliced veggies on top. I recommend a raspberry vinaigrette dressing. And if you have some walnuts around, caramelize them and really dress this salad up.
Grilled Brats & Cheesy Tots
I used the Aidells Chicken and Apple Sausages. You can get them at Costco in a huge pack for half of what they go for at other grocery stores. These are a standby in my kitchen. Grill them over medium heat until they get plump and hot, with just a little crisping on the edges. I like to serve them sliced with horseradish mustard.
The tots are just Ore-Ida frozen tots. I follow the directions on the box and bake them for about 25 minutes then add a layer of shredded cheddar then bake an additional 1-2 minutes until the cheese melts. Pile them up and try some spicy barbecue sauce with them. Plating is always important. Enjoy!
How do you carmelize walnuts?
ReplyDeleteCaramelizing walnuts is kind of an involved process but I'll give you a quick overview. Start by preheating a saucepan and adding about 1/8 cup of butter. Get the butter nice and hot. Add 1/4 cup brown sugar and 1 cup of walnuts and stir constantly while the sugar melts. Be careful not to burn the sugar. Once the sugar melts toss and stir to coat the walnuts evenly with caramel then let them cool on wax paper.
